I am a big fan of Boston Cream Pie. I am not sure why, I really don't even eat it all that often. However, I saw over on Annie's Eats where she made them into cupcakes. I bookmarked it because I loved the idea but instead I ended up making the whole pie! I think she did fabulous on this recipe, I only tweaked two things. More vanilla because I love vanilla and instead of adding the cornstarch directly into the egg mixture I mixed it with some 1/2 and 1/2 and water first. The first time I tried it the cornstarch didn't get incorporated and my cream didn't set up. Fifteen eggs later we had a great Boston Cream Pie.
