I am just going for a week though. One, my husband would divorce me if I considered giving up meat. Two, I like meat and don't want to give it up completely, I just don't want to think it has to be apart of every meal.
Just our house is a vegetarian zone though, my husband can eat whatever he wants while at work. He is the bread winner, the man can have whatever he wants on that bread.
During this week my intent is to see if we can be vegetarian and enjoy it. To see if we can feel full and satisfied without meat or meat substitutes. I will not use fake meat as a fill in. I am not trying to make meatless meals that replicate normal meat meals. I don't see the point in that. I want great filling meals with normal ingredients. "Tofurkey" is not a normal ingredient.
Today is our first day so I thought I would try something new. I have seen Kale Chips everywhere! Blogs, magazines, and Food Network. You name it and they are doing Kale Chips! So they have to be good right!

Wrong. I really wanted to like this. What a great snack idea and it is healthy. A little more healthy than the five gallon tub of animal crackers I have been working on. I just didn't like them at all. It was bitter and just off the mark. I once used kale to make collard greens and didn't like that either. So maybe I am just not a kale fan. However, I still have some leftover and sitting in the fridge so I will have to try something else with it. Kale you get one more try! Any suggestions?
I had the same experience! I thought the same thing! I tried them last summer and did not like them! Although, I do love collard greens at a restaurant.
