Potato and Ham Soup
Ham and Potato soup. I think it is one of those things that you either like or you dislike. I was on the dislike end for many years. Last year I found my love for ham and now this type of soup can come back in my life.
Ham and Potato Soup
1 T Lard
1 Small Sweet Onion Minced
1 T Minced Garlic
1 Cup Carrots
4 Cups Diced Leftover Ham
4 Cups of Chicken Stock
4 Cups Diced Potatoes
1/2 Cup Leftover Ham Drippings
1 Cup Corn
Salt and Pepper to Taste
In a large pot melt the lard. Add the onions and saute until tender. Add the garlic, carrots, and ham. Cook until the garlic becomes fragrant. Add in the stock, potatoes, and drippings. Cook on a low simmer until the potatoes are tender.
Remove two cups of the soup to a blender or food processor and puree. Add back to the pot of soup and stir. Add in the corn and season to taste. Once the corn is warmed through you are ready to eat!
This makes enough for about four reasonable people. Or three good appetite eaters.

Always a fan of soup. It's a little similar to the baked potato soup, only this looks a little healthier! :)
